Fridays are days I would like to share with you my favorite finds. Whether they are about food or products that make life happy or easier. Today, it’s about cheese!! I love cheese and this one is at the top of my list.
I discovered Beecher’s Handmade cheese during a family vacation to Seattle. I lived in Seattle for about 5 years before I was married and had a family. It was so much fun taking my family back and exploring it through their eyes.
During our visit to Pike’s Place Market, we were walking along the shops (en route to get a photo-op at the original Starbucks) when I stumbled across a window that had a big vat of cheese in the making! What?! In I went and found plenty of little samples I could nibble on while I watched the cheese makers through a large plated window. It was my idea of a little slice of heaven.
Their Flagship Cheese is a firmer cheese with little crystalline bits that form during the longer aging process. It’s packed with a creamy, nutty, crumbly goodness!
So imagine my delight when I walk into Costco and find it in with their ever expanding cheese selection. My local Costco here in Eugene, Oregon, carries in for just under $9.00/lb. These triangles are cut in just over a pound.
I have also found it at Trader Joe’s in smaller cuts (around 1/4 pound) but its about $12.29/pound.
This cheese is great for the holiday or party platter with crackers or apples. However, my families favorite is good ol’ comfort food homemade Macaroni & Cheese! Here is my go to recipe that I can make on the fly.
Beecher’s Cheese and Macaroni
Cook your noodles according to directions. Try a whole wheat pasta or even a rice or quinoa pasta. So many fun and delicious options!
Make a rue by melting 2 TBSP butter then adding 2 TBSP flour. Blend until it’s a creamy paste. Cook for 2 minutes on medium heat. Slowly add milk, blending the whole time to avoid clumps.
I like adding a little bit of cream cheese for extra creamy texture. Here’s a bonus tip: Use a cookie dough scoop!
Now for the star of the show! Cheese please!
Stir until well blended. Add the cooked and well drained noodles to cheese sauce. Salt and pepper to season.

Macaroni & Cheese with Beecher's CheesePrint Recipe
- 1 TBSP Butter
- 1 TBSP Flour
- 1 1/2 Cups milk
- 1 Heaping TBSP Cream Cheese
- 2 Cups Beecher's Cheese (you can use any cheese here, obviously. I'm just obsessing with this cheese!)
- Salt and Pepper to taste
- 1/2 package Macaroni noodles (small shells work great, too!)
Bring salted water to boil. Cook noodles according to package directions (usually 6-7 minutes).
Meanwhile, in saute pan, Melt butter on medium heat. Add flour and mix until it's a creamy paste.
Slowing wisk in milk. Wisk until sauce starts to thicken, scraping sides of mixture to incorporate.
Add cream cheese and mix until smooth.
Add cheese and mix until melted.
Drain the noodles.
Stir well drained noodles into cheese mixture.
