Peach & Blueberry Angel Food Trifle

Summer evenings were made for light and dreamy desserts!  I love having a dessert that can be made ahead of time so I can get any baking done in the morning.  And, if I am being honest, I like being a little lazy later in the day and evening, so this Peach & Blueberry Angel Food Trifle is right up my lazy days of summer alley!

I love fresh peaches.  I mean, look at the name of of my blog!  There is a farm just out of town from my home that has the juiciest peaches that it is worth the trip. Pair up fresh juicy peaches with a pint of blueberries and you have a winner.  I was almost swayed with a berry trifle – raspberries, blackberries and strawberries, oh my!

I was given a trifle bowl a few years ago from my mom and I haven’t really been putting it to good use.  Unless as decor counts!?  Didn’t think so.  So I’ve been staring at this dish on display in my home – or has it been staring me down? – for a few weeks and decided it’s time to make a trifle.   Angel Food Cake was a hands down winner in selecting my cake to use.  How can you not love the light and airy taste of Angel Food Cake?  My girls agree.

I like to make my Angel Food Cake instead of purchasing at the bakery.  I know, you can easily pick some at the store.  But everyone has their thing, and mine is making it – from a box – is my thing.  If yours is picking up some from the bakery…knock yourself out.  I am not here to judge, but just to provide inspiration for food happiness.  Choose your own path! You do you 🙂

How to Assemble

Place one third of the cubed cake.
Top with one third of the pudding mixture.
Layer the peaches and part of the blueberries.
Cover with half of the whipping cream.
Repeat layers once.
Top with the remaining cake, then the remaining pudding.
Top with the remaining berries. Make a creative design if you feel fancy!
Refrigerate if you do not serve immediately.

Ingredients

  • 1 prepared Angel Food Cake (either mix or store bought), cubed
  • 1 package Vanilla Pudding, Instant
  • 1 1/2 cups cold milk
  • 1 Cup Greek Yogurt, plain or vanilla
  • 8 oz cream cheese, room temperature
  • 1/3 cup sour cream
  • 1 carton Whipped Topping (Cool Whip, 8 oz)
  • 3 large peaches, pealed, sliced and cut in half (bite size)
  • 2 cups Blueberries

Instructions

If preparing your Angel Food cake at home, bake and cool completely.

Once cooled (or if using a store bought) cube your cake into bite size. Set aside.

In a mixing bowl, prepare your pudding with one box of instant vanilla and 1 1/2 cups cold milk.

Beat on medium until firm. Pour into another bowl and clean your bowl.

In the clean mixing bowl, mix the softened cream cheese until smooth.

Add in yogurt and sour cream. Mix until combined.

Fold in pudding.

Add in 1 cup of whipped topping. Mix until just well combined.
