Lemonade, Ginger Beer & Bourbon – Liquid Sunshine Cocktail

It’s been a while since I have posted for Thirsty Thursday! Summer has been busy and I’ve sure enjoyed a few summer cocktails. I’ve got a refreshing one for you! It’s a perfect combo of sweet citrus, some ginger heat and a smooth punch of bourbon. Let’s call it Liquid Sunshine.

By the end of summer and the hint of fall approaching, I see people sharing photos of pumpkins and food items full of pumpkin spice, and all I can think of to say is “stop it people!”. Seriously, it’s coming up in just a few short weeks and I am squeezing the last moments of summer loving here. The sunshine may not be as intense, but the effects of the sunshine in the sky are all the same – I feel more alive and motivated. The sweaters, splashing in the puddles and falling of the leaves will be enjoyed in their own sweet time. For now, pour me some sunshine!! Liquid Sunshine!!

How to Make a Liquid Sunshine Cocktail

You will love how simple this is!  Three ingredients and no fancy tools.  And here’s a fun secret, you don’t really have to measure if you’d rather eye ball it.  You know, throw in a little of this and a splash of that!  There you go.

Grab a tall cocktail glass. Fill with ice. Pour in 8 oz of your favorite lemonade (or about 3/4 of the way full). Add in 1.5 oz of bourbon or whiskey (or a six count if you are free pouring like a pro). Not a fan of bourbon, vodka and even rum would be a fun alternative. Top off the rest of the glass with ginger beer. Gently stir.

Throw in some lemon slices for some added zing and some added color to your drink.

Now go to your happy place, sit back and enjoy some liquid sunshine.

  • 8 oz Lemonade
  • 4 oz Ginger Beer
  • 1.5 oz Bourbon
  • Ice
  • Lemon Wedges

Instructions

Pour ingredients in a tall glass filled with ice.
